Blueberry Gelatin Mold: A Refreshing Treat

Blueberry gelatin mold is a classic dessert that's both visually appealing and delicious. It's a simple recipe that requires minimal effort and is perfect for parties or a quick snack.

Ingredients:

  • 1 cup fresh or frozen blueberries
  • 1/2 cup granulated sugar
  • 1/4 cup water
  • 1 tablespoon cornstarch
  • 1/4 teaspoon lemon juice
  • 1 (3-ounce) package unflavored gelatin
  • 1 cup cold water

Instructions:

  1. Make the blueberry sauce: In a small saucepan, combine the blueberries, sugar, water, and lemon juice. Bring to a boil over medium heat, then reduce heat and simmer for 5-7 minutes, or until the sauce thickens and the blueberries burst.
  2. Bloom the gelatin: In a separate bowl, sprinkle the gelatin over the cold water and let it sit for 5 minutes, or until it softens.
  3. Combine: Gradually whisk the hot blueberry sauce into the bloomed gelatin until the gelatin dissolves completely.
  4. Set the mold: Pour the mixture into a mold or individual serving glasses. Refrigerate for at least 2 hours, or until the gelatin is set.
  5. Serve: Unmold the gelatin and serve chilled.

Tips:

  • For a more colorful mold, you can add a few drops of food coloring to the blueberry sauce.
  • If you don't have a mold, you can set the gelatin in a small baking dish and cut it into squares.
  • For a more refreshing flavor, you can add a splash of sparkling water to the blueberry sauce before setting the gelatin.

Enjoy this delicious and refreshing blueberry gelatin mold!
