Blueberry Mojito Tea Bread

This unique and flavorful tea bread combines the tangy sweetness of blueberries with the refreshing mint flavor of a mojito.

Ingredients:

For the Tea Bread:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 large egg
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries
  • 1 tablespoon chopped fresh mint

For the Mojito Glaze:

  • 1/4 cup powdered sugar
  • 1 tablespoon lime juice
  • 1 teaspoon mint extract

Instructions:

  1. Preheat oven: Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan.
  2. Make the tea bread batter: In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, and salt.
  3. Combine wet ingredients: In a separate bowl, whisk together the melted butter, egg, milk, and vanilla extract.
  4. Combine wet and dry ingredients: Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix.
  5. Fold in blueberries and mint: Gently fold in the blueberries and chopped mint.
  6. Pour into pan: Pour the batter into the prepared loaf pan.
  7. Bake: Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool: Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  9. Make the mojito glaze: In a small bowl, whisk together the powdered sugar, lime juice, and mint extract until smooth.
  10. Glaze: Once the bread is cool, drizzle the mojito glaze over the top.
