Blueberry Stuffed French Toast

This decadent breakfast treat is a delicious combination of sweet blueberries and fluffy French toast.

Ingredients:

  • 6 slices thick-cut bread
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • 1 cup fresh or frozen blueberries
  • 1/4 cup sugar
  • 1 tablespoon butter
  • Maple syrup (optional)

Instructions:

  1. Prepare the French toast batter: In a shallow dish, whisk together the eggs, milk, vanilla extract, and cinnamon.
  2. Soak the bread: Dip each slice of bread into the batter, soaking both sides.
  3. Fill with blueberries: Place a spoonful of blueberries in the center of each soaked bread slice. Fold the sides of the bread over the blueberries to create a pouch.
