Flourless Oatmeal Blueberry Pancakes

These pancakes are a healthy and delicious alternative to traditional pancakes.

Ingredients:

  • 1 cup rolled oats
  • 1/4 cup ground flaxseed
  • 1/4 cup almond flour
  • 1/4 cup maple syrup
  • 1/4 cup unsweetened almond milk
  • 1 egg
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup fresh or frozen blueberries

Instructions:

  1. Combine dry ingredients: In a large bowl, whisk together the rolled oats, ground flaxseed, almond flour, baking powder, baking soda, and salt.
  2. Combine wet ingredients: In a separate bowl, whisk together the maple syrup, almond milk, and egg.
  3. Combine wet and dry ingredients: Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  4. Fold in blueberries: Gently fold in the blueberries.
  5. Cook: Heat a non-stick skillet over medium heat. Grease lightly with cooking spray. Pour 1/4 cup of batter onto the hot skillet for each pancake. Cook for 2-3 minutes per side, or until golden brown.
