Podi dosa is a flavorful variation of dosa where dosa is sprinkled or smeared with podi, a spicy powder made from various spices and lentils. Here's how you can make it:
Ingredients:
- Dosa batter (made from rice and urad dal)
- Podi (spice powder), either homemade or store-bought
- Oil or ghee for cooking
Instructions:
1. Heat a non-stick dosa tawa (griddle) over medium heat.
2. Once the tawa is hot, pour a ladleful of dosa batter onto the center of the tawa.
3. Using the back of the ladle, spread the batter evenly in a circular motion to form a thin dosa.
4. Drizzle some oil or ghee around the edges of the dosa and in the center.
5. Sprinkle a generous amount of podi evenly over the dosa. You can either sprinkle it directly or mix podi with a little oil or ghee to form a paste and then spread it over the dosa.
6. Press the podi lightly into the dosa so that it sticks.
7. Let the dosa cook until the bottom turns golden brown and crispy.
8. Carefully flip the dosa using a spatula and cook the other side until golden brown.
9. Once both sides are cooked to perfection, remove the podi dosa from the tawa and serve hot.
10. Repeat the process with the remaining batter to make more dosas.
