Tomato dosa is a tangy and flavorful variation of dosa made with tomatoes and spices. Here's a simple recipe to make it:

Ingredients:
- 1 cup dosa batter (made from rice and urad dal)
- 1 large tomato, finely chopped
- 2-3 green chilies, finely chopped
- 1-inch piece of ginger, grated
- Handful of fresh coriander leaves, chopped
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon mustard seeds
- A pinch of asafoetida (hing)
- Salt to taste
- Oil or ghee for cooking

Instructions:
1. In a mixing bowl, combine the dosa batter, finely chopped tomatoes, green chilies, grated ginger, chopped coriander leaves, cumin seeds, mustard seeds, asafoetida, and salt. Mix well until all the ingredients are evenly incorporated into the batter.
2. Heat a non-stick dosa tawa (griddle) over medium heat.
3. Once the tawa is hot, pour a ladleful of the tomato dosa batter onto the center of the tawa.
4. Using the back of the ladle, spread the batter evenly in a circular motion to form a thin dosa.
5. Drizzle some oil or ghee around the edges of the dosa and in the center.
6. Let the dosa cook until the bottom turns golden brown and crispy.
7. Carefully flip the dosa using a spatula and cook the other side until golden brown.
8. Once both sides are cooked to perfection, remove the tomato dosa from the tawa and serve hot.
9. Repeat the process with the remaining batter to make more dosas.

Tomato dosa is delicious on its own or can be served with chutney, sambar, or any accompaniment of your choice. Enjoy the tangy goodness of tomato dosa!
