Blueberry Custard: A Creamy and Refreshing Dessert

Blueberry custard is a delightful and easy-to-make dessert that combines the tartness of blueberries with the richness of custard. It's perfect for a summer treat or a light dessert after a meal.

Ingredients:

  • 1 cup fresh or frozen blueberries
  • 1/2 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1/4 cup water
  • 1/4 teaspoon ground cinnamon (optional)
  • 2 large egg yolks
  • 1 cup milk
  • 1/4 teaspoon vanilla extract

Instructions:

  1. Make the blueberry sauce: In a small saucepan, combine the blueberries, sugar, cornstarch, water, and cinnamon (if using). Bring to a boil over medium heat, then reduce heat and simmer for 5-7 minutes, or until the sauce thickens and the blueberries burst.
  2. Make the custard: In a separate bowl, whisk together the egg yolks, milk, and vanilla extract.
  3. Combine: Gradually whisk the hot blueberry sauce into the egg mixture, ensuring the custard is smooth.
  4. Cook: Pour the custard mixture back into the saucepan and cook over low heat, stirring constantly, until the custard thickens and coats the back of a spoon. Be careful not to let it boil, or it may curdle.  
  5. Cool: Let the custard cool slightly before serving.

Serving suggestions:

  • Serve the blueberry custard chilled in individual bowls.
  • Top with whipped cream or a dollop of vanilla ice cream.
  • Serve with cookies, shortbread, or biscotti.
